Delicious cupcakes with a rich blackberry swirl.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blackberries, pureed
  • 1/4 cup blackberry puree for swirl

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar.
  3. Add eggs, one at a time, mixing well after each.
  4. Stir in milk.
  5. In another bowl, mix flour, baking powder, and salt.
  6. Gradually add dry ingredients to the wet mixture.
  7. Fold in blackberry puree.
  8. Fill cupcake liners with batter.
  9. Drop spoonfuls of blackberry puree on top and swirl with a toothpick.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
