A quick and easy recipe for a refreshing lemon pie made using a blender.
Ingredients

- 1 cup of crushed graham crackers
- 1/2 cup of melted butter
- 1 cup of fresh lemon juice
- 1 can of sweetened condensed milk
- 3 large eggs
- 1 tablespoon of lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers and melted butter until combined.
- Press the mixture into the bottom of a pie dish to form the crust.
- In a blender, combine lemon juice, sweetened condensed milk, eggs, and lemon zest.
- Blend until smooth.
- Pour the lemon mixture into the prepared crust.
- Bake for 25 minutes or until set.
- Let cool before serving.
Notes
- Chill the pie in the refrigerator for a few hours for better flavor.
- Top with whipped cream if desired.
