- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups fresh blueberries
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing on low speed after each addition.
- Stir in sour cream and fold in blueberries gently.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 60 minutes or until set but slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
Notes
- You can top the cheesecake with additional blueberries or a blueberry sauce for presentation.
- Consider using a water bath for even baking.
- For a twist, add lemon zest to the batter.
