- 1/2 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the dry ingredients: all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In another bowl, cream together sugar, cream cheese, and butter until smooth.
- Add eggs and vanilla extract to the cream cheese mixture, and mix well.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the blueberries gently.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can substitute frozen blueberries if fresh are not available.
- For a sweeter taste, increase sugar by 1/4 cup.
