Instructions
- Blend blueberries in a food processor until smooth.
- In a bowl, mix cream cheese, lemon juice, and lemon zest until well combined.
- Add the blueberry puree to the cream cheese mixture and stir until smooth.
- Melt white chocolate in a double boiler over low heat.
- Fold the melted white chocolate into the blueberry mixture.
- Chill the mixture in the refrigerator for 30 minutes until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll each truffle in crushed graham crackers and dust with powdered sugar.
- Refrigerate for another 15 minutes before serving.
