- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/4 cup flour (for streusel)
- 1/4 cup brown sugar (for streusel)
- 2 tablespoons cold butter (for streusel)
- 1/4 teaspoon cinnamon (for streusel)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, oats, baking powder, baking soda, and salt.
- In another bowl, cream butter, brown sugar, and granulated sugar.
- Add egg and vanilla to the butter mixture and mix well.
- Combine the wet and dry ingredients.
- Gently fold in blueberries.
- For the streusel, mix flour, brown sugar, cold butter, and cinnamon until crumbly.
- Drop spoonfuls of cookie dough on a baking sheet.
- Sprinkle streusel topping on each cookie.
- Bake for 12-15 minutes until golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Use frozen blueberries if fresh are unavailable.
