A hearty dish of braised lamb shanks cooked until tender.
Ingredients

- 2 lamb shanks
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (160°C).
- Season the lamb shanks with salt and pepper.
- In a large Dutch oven, brown the lamb shanks on all sides.
- Add onion, carrots, celery, and garlic; sauté until softened.
- Stir in red wine and bring to a boil.
- Add beef broth, tomato paste, and rosemary.
- Cover and transfer to the oven.
- Braise for 2 to 2.5 hours until tender.
- Remove from oven and let rest before serving.
Notes
- Serve with mashed potatoes or polenta.
- Store leftovers in the refrigerator for up to 3 days.
