Ingredients

  • 2 lamb shanks
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the lamb shanks with salt and pepper.
  3. In a large Dutch oven, brown the lamb shanks on all sides.
  4. Add onion, carrots, celery, and garlic; sauté until softened.
  5. Stir in red wine and bring to a boil.
  6. Add beef broth, tomato paste, and rosemary.
  7. Cover and transfer to the oven.
  8. Braise for 2 to 2.5 hours until tender.
  9. Remove from oven and let rest before serving.

  • Serve with mashed potatoes or polenta.
  • Store leftovers in the refrigerator for up to 3 days.
