A savory breakfast quesadilla filled with eggs, cheese, and vegetables.
Ingredients

- 4 large eggs
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup bell peppers, diced
- 1/4 cup onion, diced
- 1 tablespoon olive oil
- 4 flour tortillas
- Salt, to taste
- Pepper, to taste
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced onions and peppers. Sauté until soft.
- In a bowl, whisk eggs with salt and pepper.
- Pour eggs into the skillet. Cook until scrambled.
- Place one tortilla in a separate skillet over low heat.
- Sprinkle half of the cheese on the tortilla.
- Add scrambled egg mixture on top of the cheese.
- Sprinkle remaining cheese over the eggs.
- Top with another tortilla.
- Cook until the bottom tortilla is golden, then flip and cook the other side until golden.
- Remove from heat and cut into wedges.
Notes
- Use different cheeses for variations.
- Add cooked bacon or sausage for extra protein.
- Serve with salsa or avocado.
