Description

A savory breakfast quesadilla filled with eggs, cheese, and vegetables.


Ingredients

  • 4 large eggs
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil
  • 4 flour tortillas
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onions and peppers. Sauté until soft.
  3. In a bowl, whisk eggs with salt and pepper.
  4. Pour eggs into the skillet. Cook until scrambled.
  5. Place one tortilla in a separate skillet over low heat.
  6. Sprinkle half of the cheese on the tortilla.
  7. Add scrambled egg mixture on top of the cheese.
  8. Sprinkle remaining cheese over the eggs.
  9. Top with another tortilla.
  10. Cook until the bottom tortilla is golden, then flip and cook the other side until golden.
  11. Remove from heat and cut into wedges.

Notes

  • Use different cheeses for variations.
  • Add cooked bacon or sausage for extra protein.
  • Serve with salsa or avocado.
