Ingredients

- 4 large tortillas
- 6 eggs
- 1 cup shredded cheese
- 1 cup diced vegetables (bell peppers, onions)
- Salt and pepper to taste
Instructions
- Beat the eggs in a bowl and season with salt and pepper.
- In a skillet, cook the diced vegetables until soft.
- Add the beaten eggs to the skillet and scramble until fully cooked.
- Remove from heat and mix in shredded cheese.
- Place a portion of the egg mixture on each tortilla.
- Roll up the tortillas tightly and slice in half.
- Serve warm.
