Description

A simple brine for turkey that enhances flavor and moisture.


Ingredients

Scale
  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 gallon water
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 6 cloves garlic, crushed
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 1 orange, sliced
  • 1 lemon, sliced

Instructions

  1. Dissolve salt and sugar in 1 gallon of water in a large pot.
  2. Add peppercorns, allspice, garlic, thyme, rosemary, orange, and lemon.
  3. Bring to a boil, then let cool completely.
  4. Submerge turkey in brine and refrigerate for 12 to 24 hours.
  5. Remove turkey from brine and rinse under cold water.
  6. Pat dry and cook as desired.

  • For best results, use a fresh turkey.
  • Adjust brine ingredients based on turkey size.
