Description
A refreshing British style ceviche salad featuring cod, citrus, and herbs.
Ingredients

- 300g cod fillet, skinless and boneless
- 100ml lime juice
- 50ml lemon juice
- 1 small red onion, finely chopped
- 1 red chili, deseeded and chopped
- 1 avocado, diced
- 100g cherry tomatoes, halved
- 30g fresh coriander, chopped
- Salt and pepper to taste
Instructions
- Cut the cod fillet into small cubes and place in a bowl.
- Add lime and lemon juice to the bowl, ensuring the fish is submerged. Cover and refrigerate for 30 minutes to ‘cook’ the fish.
- After 30 minutes, drain excess citrus juice.
- Add red onion, chili, avocado, cherry tomatoes, and coriander to the cod.
- Toss gently to combine all ingredients.
- Season with salt and pepper to taste.
- Plate the ceviche, garnishing with extra coriander if desired.
Notes
- For a spicier version, leave some seeds in the chili.
- Use fresh cod for the best flavor and texture.
- Serve chilled for optimal taste.
- Pair with crusty bread or tortilla chips.
