Ingredients

  • 300g cod fillet, skinless and boneless
  • 100ml lime juice
  • 50ml lemon juice
  • 1 small red onion, finely chopped
  • 1 red chili, deseeded and chopped
  • 1 avocado, diced
  • 100g cherry tomatoes, halved
  • 30g fresh coriander, chopped
  • Salt and pepper to taste

Instructions

  1. Cut the cod fillet into small cubes and place in a bowl.
  2. Add lime and lemon juice to the bowl, ensuring the fish is submerged. Cover and refrigerate for 30 minutes to ‘cook’ the fish.
  3. After 30 minutes, drain excess citrus juice.
  4. Add red onion, chili, avocado, cherry tomatoes, and coriander to the cod.
  5. Toss gently to combine all ingredients.
  6. Season with salt and pepper to taste.
  7. Plate the ceviche, garnishing with extra coriander if desired.

Notes

  • For a spicier version, leave some seeds in the chili.
  • Use fresh cod for the best flavor and texture.
