Ingredients

- 8 oz pasta
- 1 medium butternut squash, diced
- 4 tbsp unsalted butter
- 10 fresh sage leaves
- Salt to taste
- Pepper to taste
- Parmesan cheese for serving
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 25-30 minutes until tender.
- Cook pasta according to package instructions. Reserve 1 cup of pasta water.
- In a skillet, melt butter over medium heat until it turns brown and develops a nutty aroma.
- Add sage leaves to the butter and cook for 1-2 minutes.
- Combine cooked pasta, roasted squash, and brown butter-sage mixture. Add reserved pasta water as needed.
- Serve with grated Parmesan cheese.

- Use any pasta of your choice.
- Adjust the amount of sage based on your preference.
- This dish can be made vegetarian by omitting cheese or using a vegan alternative.
