Instructions

  2. Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. Cook pasta according to package instructions. Reserve 1 cup of pasta water.
  5. In a skillet, melt butter over medium heat until it turns brown and develops a nutty aroma.
  6. Add sage leaves to the butter and cook for 1-2 minutes.
  7. Combine cooked pasta, roasted squash, and brown butter-sage mixture. Add reserved pasta water as needed.
  8. Serve with grated Parmesan cheese.
