Description
Brown sugar pop tart cookies are sweet, flaky treats filled with a brown sugar cinnamon mixture.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup milk
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour and salt.
- In another bowl, cream the butter with brown sugar and granulated sugar.
- Add the egg and vanilla to the butter mixture and mix well.
- Gradually add the flour mixture to the wet ingredients.
- Roll out the dough and cut into rectangles.
- Mix brown sugar and cinnamon for the filling and place on half the rectangles.
- Cover with remaining rectangles and seal the edges.
- Brush with milk and bake for 15-20 minutes.
- Let cool, then mix powdered sugar and milk for icing and drizzle on top.
Notes
- Store cookies in an airtight container.
- Chill dough for easier handling.
