Description

A rich butter pecan cake loaf topped with creamy icing.


Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup chopped pecans
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugars until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the butter mixture, alternating with buttermilk.
  6. Fold in chopped pecans.
  7. Pour batter into a greased loaf pan.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool before icing.
  10. For icing, beat cream cheese and powdered sugar until smooth.
  11. Add vanilla and mix well.
  12. Spread icing over cooled cake loaf.
