Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 cup corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, sugar, and salt to form the pastry dough.
  3. Roll out the dough and cut into circles. Place in a muffin tin.
  4. In another bowl, combine brown sugar, corn syrup, eggs, and vanilla.
  5. Add raisins or pecans if desired.
  6. Pour the filling into the pastry shells.
  7. Bake for 20-25 minutes until the filling is set and the tops are golden.
  8. Allow to cool before serving.
