- 2 cups butternut squash, cubed
- 8 oz pasta of choice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Preheat oven to 400°F (200°C).
- Toss butternut squash with olive oil, salt, and pepper.
- Spread squash on a baking sheet and roast for 25-30 minutes.
- Cook pasta according to package instructions.
- In a skillet, sauté garlic until fragrant.
- Add roasted squash and vegetable broth, and blend until smooth.
- Combine the sauce with cooked pasta.
- Serve with Parmesan cheese and nutmeg on top.
