Ingredients

- 1 medium butternut squash, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons maple syrup
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the butternut squash with olive oil, salt, pepper, cinnamon, and nutmeg.
- Spread the mixture on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through.
- Remove from the oven and drizzle with maple syrup.
- Add pecans and cranberries, then toss gently.
- Serve warm.
