Ingredients

  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • 2 cloves garlic, minced
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook penne pasta according to package instructions. Drain and set aside.
  3. In a large skillet, cook diced chicken until browned. Add garlic and Cajun seasoning, cooking for an additional 2 minutes.
  4. In a large bowl, mix cream cheese and heavy cream until smooth.
  5. Add cooked chicken, pasta, green onions, and half of the cheddar cheese to the cream mixture. Stir to combine.
  6. Transfer the mixture to a baking dish and top with remaining cheddar cheese.
  7. Bake for 25-30 minutes or until cheese is bubbly and golden.
