Ingredients

  • 1 lb sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups rice
  • 2 tsp Cajun seasoning
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage; cook until browned.
  3. Add onion, bell pepper, celery, and garlic; sauté until soft.
  4. Stir in Cajun seasoning and diced tomatoes.
  5. Add rice and chicken broth; bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Add shrimp and cook until pink.
  8. Season with salt and pepper.
  9. Serve hot.
