Ingredients

- 1 lb chicken, diced
- 1 lb shrimp, peeled
- 1 lb sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups rice
- 2 tsp Cajun seasoning
- 1 can diced tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage; cook until browned.
- Add onion, bell pepper, celery, and garlic; sauté until soft.
- Stir in Cajun seasoning and diced tomatoes.
- Add rice and chicken broth; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add shrimp and cook until pink.
- Season with salt and pepper.
- Serve hot.
