Ingredients

  • 1 pound Cajun sausage, sliced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 green onions, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned.
  3. Add onion, bell pepper, and garlic. Cook until softened.
  4. Stir in rice and Cajun seasoning. Mix well.
  5. Add chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions before serving.

Notes

  • Adjust seasoning to your taste.
  • Use any type of sausage if Cajun is not available.
