- 6 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces cooked shrimp, chopped
- 1 tablespoon fresh parsley, chopped
Instructions
- Hard boil the eggs and cool them in cold water.
- Peel the eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Add mayonnaise, Dijon mustard, Cajun seasoning, salt, and pepper to the yolks. Mix until smooth.
- Fold in chopped shrimp and parsley.
- Fill the egg whites with the yolk mixture.
- Garnish with extra shrimp and parsley if desired.
