Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup brewed coffee, cooled
  • ½ cup caramel sauce
  • ½ cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, coffee, caramel sauce, and vanilla extract.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Sprinkle chocolate chips on top.
  8. Bake for 50-60 minutes or until set. Let cool.
  9. Chill in the refrigerator for at least 4 hours before serving.
