Ingredients

  • ½ cup melted butter
  • 2 cups cream cheese

  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas
  • ¼ cup brown sugar
  • ¼ cup rum
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract.
  7. Pour the cream cheese mixture over the crust.
  8. Bake for 50-60 minutes or until set.
  9. Let it cool for 1 hour, then refrigerate for at least 4 hours.
  10. In a skillet, heat brown sugar and lemon juice over medium heat.
  11. Add sliced bananas and cook until caramelized.
  12. Remove from heat and stir in rum.
  13. Top the cheesecake with caramelized bananas and serve.
