Ingredients

  • 2 cups butternut squash, diced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup goat cheese, crumbled
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add onions and cook until caramelized, about 15 minutes.
  4. In a separate pot, steam butternut squash until tender, about 10 minutes.
  5. Roll out the puff pastry and place it on a baking sheet.
  6. Spread the caramelized onions over the pastry.
  7. Add the steamed butternut squash on top.
  8. Sprinkle with thyme and goat cheese.
  9. Brush the edges of the pastry with beaten egg.
  10. Bake for 25-30 minutes until golden brown.
