Ingredients

  • 1 lb chicken thighs
  • 2 cups long grain rice
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp thyme
  • 1 tsp allspice
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot.
  2. Add onion, garlic, and bell pepper. Sauté until soft.
  3. Add chicken thighs and brown on all sides.
  4. Stir in thyme, allspice, salt, and pepper.
  5. Add rice, coconut milk, and chicken broth. Stir well.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20-25 minutes until rice is cooked.
  8. Remove from heat and let sit for 5 minutes. Fluff rice with a fork.
