Ingredients

- 2 cups long-grain rice
- 1 lb chicken thighs, skinless
- 1 can coconut milk
- 1 cup chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tsp curry powder
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add chicken and brown on all sides.
- Stir in curry powder, thyme, salt, and pepper.
- Add rice, coconut milk, and chicken broth. Stir well.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes until rice is cooked.
- Remove from heat, fluff rice with a fork, and stir in lime juice and cilantro.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices according to taste.
- Let the dish sit covered for a few minutes before serving.
