Ingredients

  • 1 lb chicken thighs, skinless
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tsp curry powder
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until soft.
  3. Add chicken and brown on all sides.
  4. Stir in curry powder, thyme, salt, and pepper.
  5. Add rice, coconut milk, and chicken broth. Stir well.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20-25 minutes until rice is cooked.
  8. Remove from heat, fluff rice with a fork, and stir in lime juice and cilantro.

Notes

  • Use bone-in chicken for more flavor.
  • Adjust spices according to taste.
