  • 1 teaspoon ground cinnamon

  • 1/2 cup chopped walnuts
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a jelly roll pan and line it with parchment paper.
  3. In a large bowl, mix grated carrots, sugar, and eggs until combined.
  4. Add flour, baking powder, baking soda, cinnamon, and salt. Stir until smooth.
  5. Fold in chopped walnuts.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 15-20 minutes, until a toothpick comes out clean.
  8. While baking, prepare the frosting by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
  9. Once baked, let the cake cool for a few minutes.
  10. Invert the cake onto a clean towel dusted with powdered sugar.
  11. Spread the cream cheese frosting evenly over the cake.
  12. Roll the cake tightly using the towel and let it cool completely in the fridge.
