- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a jelly roll pan and line it with parchment paper.
- In a large bowl, mix grated carrots, sugar, and eggs until combined.
- Add flour, baking powder, baking soda, cinnamon, and salt. Stir until smooth.
- Fold in chopped walnuts.
- Spread the batter evenly in the prepared pan.
- Bake for 15-20 minutes, until a toothpick comes out clean.
- While baking, prepare the frosting by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
- Once baked, let the cake cool for a few minutes.
- Invert the cake onto a clean towel dusted with powdered sugar.
- Spread the cream cheese frosting evenly over the cake.
- Roll the cake tightly using the towel and let it cool completely in the fridge.

- Ensure the cake is completely cool before frosting.
- Store leftovers in the refrigerator.
- Can add raisins for extra flavor.
