A delicious carrot cake roll filled with cream cheese frosting.
Ingredients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix grated carrots, sugar, and eggs.
- Add flour, baking powder, baking soda, cinnamon, and salt. Mix well.
- Fold in walnuts.
- Spread the batter on a parchment-lined baking sheet.
- Bake for 15-20 minutes until golden.
- Let it cool slightly, then roll it in a clean kitchen towel.
- In another bowl, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mix until creamy.
- Unroll the cake, spread the frosting, and roll it back up.
- Chill before serving.
