  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add oil and eggs, and mix until well combined.
  4. Fold in grated carrots, pineapple, and walnuts.
  5. Pour the batter into a greased sheet pan.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cake cool completely before frosting.
  8. In a separate bowl, beat cream cheese and butter until smooth.
  9. Gradually add powdered sugar and vanilla, mixing until creamy.
  10. Frost the cooled cake and cut into squares to serve.
