Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots with olive oil, salt, pepper, and honey.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender.
- Garnish with fresh parsley before serving.
