Description
A healthy version of fried rice using cauliflower and shrimp.
Ingredients
Scale
- 1 head of cauliflower, grated
- 1 cup shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 green onions, chopped
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Grate the cauliflower to make rice-sized pieces.
- Heat sesame oil in a pan over medium heat.
- Add shrimp and cook until pink, then remove from pan.
- Add mixed vegetables and sauté for 3-4 minutes.
- Add cauliflower rice and stir-fry for another 5 minutes.
- Push the mixture to one side, pour in the beaten eggs, and scramble.
- Add shrimp back to the pan and stir in soy sauce.
- Season with salt and pepper, and mix well.
- Garnish with green onions before serving.
Notes
- Use fresh or frozen shrimp.
- Adjust soy sauce to taste.
- For a spicier version, add chili flakes.
