Cauliflower Fried Rice with Shrimp: 7 Steps to Delight

Description

A healthy version of fried rice using cauliflower and shrimp.


Ingredients

Scale
  • 1 head of cauliflower, grated
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 green onions, chopped
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower to make rice-sized pieces.
  2. Heat sesame oil in a pan over medium heat.
  3. Add shrimp and cook until pink, then remove from pan.
  4. Add mixed vegetables and sauté for 3-4 minutes.
  5. Add cauliflower rice and stir-fry for another 5 minutes.
  6. Push the mixture to one side, pour in the beaten eggs, and scramble.
  7. Add shrimp back to the pan and stir in soy sauce.
  8. Season with salt and pepper, and mix well.
  9. Garnish with green onions before serving.

Notes

  • Use fresh or frozen shrimp.
  • Adjust soy sauce to taste.
  • For a spicier version, add chili flakes.
