Ingredients

- 1 head of cauliflower
- 2 cups shredded cheese
- 4 slices of bread
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat the grill or stovetop skillet over medium heat.
- Chop the cauliflower into small florets.
- Steam the cauliflower until soft, about 5 minutes.
- Mash the cauliflower and mix in the cheese, salt, and pepper.
- Spread butter on one side of each slice of bread.
- Place a slice of bread, butter side down, on the skillet.
- Add a layer of the cauliflower mixture on top.
- Top with another slice of bread, butter side up.
- Grill for 3-4 minutes on each side until golden brown.
