Description

A creamy and flavorful cauliflower soup with cheddar cheese and garlic.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of cheddar cheese, shredded
  • 1 cup of milk
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add chopped cauliflower and stir for a few minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until cauliflower is tender, about 15 minutes.
  6. Puree the soup using an immersion blender or in batches in a blender.
  7. Stir in milk and cheddar cheese until melted.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • For a vegan option, use plant-based cheese and milk.
  • Can be garnished with extra cheese or fresh herbs.
