Description
A creamy and flavorful cauliflower soup with cheddar cheese and garlic.
Ingredients

- 1 head of cauliflower, chopped
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of cheddar cheese, shredded
- 1 cup of milk
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add chopped cauliflower and stir for a few minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Puree the soup using an immersion blender or in batches in a blender.
- Stir in milk and cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot.

- For a vegan option, use plant-based cheese and milk.
- Can be garnished with extra cheese or fresh herbs.
