Ingredients

- 1 medium head of cauliflower, riced
- 1 cup diced onions
- 1 cup diced celery
- 1 cup diced carrots
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup vegetable broth
- 1/2 cup chopped fresh parsley
Instructions
- Preheat your oven to 350°F (175°C).
- Rice the cauliflower using a food processor.
- In a large skillet, heat olive oil over medium heat.
- Add onions, celery, and carrots; sauté until soft.
- Stir in garlic, thyme, sage, salt, and pepper; cook for 2 minutes.
- Add riced cauliflower and vegetable broth; mix well.
- Cook for 5-7 minutes until cauliflower is tender.
- Remove from heat and stir in parsley.
- Transfer the mixture to a baking dish and bake for 15 minutes.
Notes
- Adjust seasoning to taste.
- Can be made ahead and reheated.
- Use gluten-free broth for gluten-free option.
