Cheesy garlic zucchini steaks are a delicious and healthy side dish.
Ingredients

- 2 large zucchinis
- 1 cup shredded mozzarella cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchinis into 1/2-inch thick steaks.
- Place the zucchini steaks on a baking sheet.
- Drizzle olive oil over the zucchini and sprinkle with salt and pepper.
- Spread minced garlic evenly on top.
- Bake in the oven for 15 minutes.
- Remove from oven and top with mozzarella cheese.
- Return to oven and bake for an additional 10 minutes until cheese is melted.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add Italian seasoning.
- Can substitute mozzarella with your favorite cheese.
- Serve immediately for best taste.
