A delightful quick bread featuring the flavors of cherry, almond, and poppy seeds.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon almond extract
- 1 cup cherries, pitted and chopped
- 2 tablespoons poppy seeds
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, cream butter until smooth.
- Add buttermilk, eggs, and almond extract to the butter; mix well.
- Combine wet and dry ingredients.
- Fold in cherries and poppy seeds.
- Pour batter into a greased loaf pan.
- Bake for 55-65 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- Can be frozen for up to 3 months.
- Substitute fresh cherries with dried cherries if needed.
