Description
Cherry Bakewell Tartlets are delicious pastries filled with almond frangipane and topped with cherries.
Ingredients

- 1 package of shortcrust pastry
- 100g ground almonds
- 100g butter, softened
- 100g sugar
- 2 large eggs
- 1 teaspoon almond extract
- 12 cherries, pitted
- icing sugar for dusting
Instructions
- Preheat your oven to 180°C (350°F).
- Roll out the shortcrust pastry and line a muffin tray.
- In a bowl, cream the butter and sugar together.
- Add the eggs and almond extract, mixing well.
- Fold in the ground almonds.
- Spoon the frangipane mixture into the pastry cases.
- Top each tartlet with a cherry.
- Bake for 20-25 minutes until golden.
- Allow to cool, then dust with icing sugar.
Notes
- Ensure cherries are pitted before use.
- Store in an airtight container.
- Can be served warm or cold.
