Description

Cherry Bakewell Tartlets are delicious pastries filled with almond frangipane and topped with cherries.


Ingredients

  • 1 package of shortcrust pastry
  • 100g ground almonds
  • 100g butter, softened
  • 100g sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 12 cherries, pitted
  • icing sugar for dusting

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a muffin tray.
  3. In a bowl, cream the butter and sugar together.
  4. Add the eggs and almond extract, mixing well.
  5. Fold in the ground almonds.
  6. Spoon the frangipane mixture into the pastry cases.
  7. Top each tartlet with a cherry.
  8. Bake for 20-25 minutes until golden.
  9. Allow to cool, then dust with icing sugar.
