A simple recipe for chicken and sweet potato bowls for two.
Ingredients

- 2 chicken breasts
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 1 cup broccoli florets
- 1 avocado, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes.
- Toss sweet potatoes with olive oil, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- Season the chicken breasts with salt and pepper.
- Add chicken to the baking sheet with sweet potatoes and roast for an additional 20 minutes.
- In the last 10 minutes, add broccoli florets to the baking sheet.
- Once cooked, slice the chicken and assemble the bowls with sweet potatoes, broccoli, and avocado.
Notes
- Adjust seasoning as per your taste.
- Feel free to add other vegetables.
