Ingredients

  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 1 cup broccoli florets
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes.
  3. Toss sweet potatoes with olive oil, paprika, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and roast for 25 minutes.
  5. Season the chicken breasts with salt and pepper.
  6. Add chicken to the baking sheet with sweet potatoes and roast for an additional 20 minutes.
  7. In the last 10 minutes, add broccoli florets to the baking sheet.
  8. Once cooked, slice the chicken and assemble the bowls with sweet potatoes, broccoli, and avocado.
