- 1 cup wild rice, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery; sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add diced chicken and cook until browned.
- Pour in chicken broth and add wild rice, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 30 minutes until rice is tender.
- Stir in heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes before serving.
