A delicious chicken avocado melt sandwich that combines savory chicken, creamy avocado, and melted cheese.

- 2 slices of bread
- 1 cup cooked chicken, shredded
- 1 ripe avocado, mashed
- 1/2 cup shredded cheese
- 1 tablespoon mayonnaise
- Salt and pepper to taste
- Butter for grilling
Instructions
- Preheat a skillet over medium heat.
- In a bowl, mix shredded chicken, mashed avocado, mayonnaise, salt, and pepper.
- Spread the chicken avocado mixture on one slice of bread.
- Top with shredded cheese and cover with the second slice of bread.
- Butter the outside of both slices of bread.
- Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes per side.
- Remove from the skillet, slice, and serve warm.
Notes
- Use whole grain bread for added nutrition.
- Feel free to add tomatoes or lettuce for extra crunch.
- This sandwich can be made in a panini press for quicker grilling.
