A refreshing chicken couscous salad packed with flavors.


Ingredients

  • 1 cup couscous
  • 2 cups chicken broth
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring chicken broth to a boil in a pot.
  2. Add couscous and remove from heat. Cover and let sit for 5 minutes.
  3. Fluff couscous with a fork and let cool.
  4. In a large bowl, combine chicken, tomatoes, cucumber, onion, and parsley.
  5. Add cooled couscous to the bowl.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
