Description
A refreshing chicken couscous salad packed with flavors.
Ingredients

- 1 cup couscous
- 2 cups chicken broth
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Bring chicken broth to a boil in a pot.
- Add couscous and remove from heat. Cover and let sit for 5 minutes.
- Fluff couscous with a fork and let cool.
- In a large bowl, combine chicken, tomatoes, cucumber, onion, and parsley.
- Add cooled couscous to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
