Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cooked rice, chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
  3. Transfer mixture to a greased baking dish.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes or until chicken is cooked through and cheese is melted.
  6. Let it cool for a few minutes before serving.
