Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine cooked rice, chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
- Transfer mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes or until chicken is cooked through and cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- You can use leftover chicken or rotisserie chicken.
- Feel free to add other vegetables like zucchini or mushrooms.
- Adjust spices to your taste.
