- 4 chicken thighs, skin-on, bone-in
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon fresh rosemary, chopped
- 1 lemon, sliced
Instructions
- Preheat your cast iron skillet over medium-high heat.
- Pat the chicken thighs dry with paper towels.
- Season both sides with salt, pepper, garlic powder, and paprika.
- Add olive oil to the skillet, allowing it to heat until shimmering.
- Place the chicken thighs skin-side down in the skillet.
- Cook for 7-10 minutes until the skin is golden brown and crispy.
- Flip the chicken and add rosemary and lemon slices around the chicken.
- Reduce heat to medium-low and cover the skillet.
- Cook for an additional 20-25 minutes until the internal temperature reaches 165°F.
- Remove from heat and let rest for 5 minutes before serving.
Notes
- For a spicy kick, add cayenne pepper to the seasoning.
- Try using different herbs like thyme or oregano.
- Serve with seasonal vegetables for a complete meal.
