Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon fresh rosemary, chopped
  • 1 lemon, sliced

Instructions

  1. Preheat your cast iron skillet over medium-high heat.
  2. Pat the chicken thighs dry with paper towels.
  3. Season both sides with salt, pepper, garlic powder, and paprika.
  4. Add olive oil to the skillet, allowing it to heat until shimmering.
  5. Place the chicken thighs skin-side down in the skillet.
  6. Cook for 7-10 minutes until the skin is golden brown and crispy.
  7. Flip the chicken and add rosemary and lemon slices around the chicken.
  8. Reduce heat to medium-low and cover the skillet.
  9. Cook for an additional 20-25 minutes until the internal temperature reaches 165°F.
  10. Remove from heat and let rest for 5 minutes before serving.

  • For a spicy kick, add cayenne pepper to the seasoning.
