Description

A refreshing chicken pasta salad perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked pasta
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions and let it cool.
  2. In a large bowl, combine the cooked pasta, chicken, tomatoes, cucumber, red onion, and bell pepper.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and mix well.
  5. Add the chopped parsley and toss again.
  6. Refrigerate for at least 30 minutes before serving.
