A healthy and flavorful wrap filled with chili lime chickpeas and cauliflower.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 cup cauliflower florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- Salt to taste
- 4 large tortillas
- 1 cup lettuce, shredded
- 1/2 cup tomatoes, diced
- 1/4 cup cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas and cauliflower with olive oil, chili powder, lime juice, and salt.
- Spread on a baking sheet and roast for 20 minutes.
- Warm tortillas in a skillet.
- Fill each tortilla with chickpea mixture, lettuce, tomatoes, and cilantro.
- Wrap tightly and serve.

- Adjust spices according to your taste.
- Use whole grain tortillas for added fiber.
