Ingredients

  • 200g powdered sugar
  • 150g egg whites
  • 300g granulated sugar
  • 50ml water
  • Food coloring (red and gold)
  • Filling of choice (matcha, red bean, or sesame)

Instructions

  1. Preheat the oven to 150°C (300°F).
  2. In a bowl, mix almond flour and powdered sugar.
  3. In a saucepan, combine granulated sugar and water; heat until sugar dissolves.
  4. Whip egg whites until soft peaks form, then gradually add sugar syrup while whipping until stiff peaks form.
  5. Fold in the almond mixture and food coloring.
  6. Pipe small circles onto a baking sheet lined with parchment paper.
  7. Let them rest for 30 minutes to form a skin.
  8. Bake for 15-20 minutes, then cool.
  9. Sandwich with your chosen filling.
