Ingredients

- 1 cup rice
- 2 cups water
- 1 lb chicken, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables
- 2 green onions, chopped
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
Instructions
- Rinse the rice under cold water.
- In a pot, bring the water to a boil.
- Add the rice, cover, and reduce heat. Cook for 15 minutes.
- In a skillet, heat sesame oil over medium heat.
- Add ginger and garlic, sauté for 1 minute.
- Add chicken and cook until no longer pink.
- Add mixed vegetables and soy sauce, stir well.
- Combine cooked rice with chicken mixture.
- Garnish with green onions before serving.
Notes
- Use jasmine rice for best flavor.
- Adjust soy sauce to taste.
- Feel free to add other proteins.
