Description
A spicy and flavorful tofu dish inspired by Chipotle’s sofritas.
Ingredients

- 14 oz firm tofu
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, minced
- 2 tbsp adobo sauce
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt to taste
- Black pepper to taste
- 1/4 cup vegetable broth
- Fresh cilantro, for garnish
Instructions
- Press and drain the tofu to remove excess moisture.
- Crumble the tofu into small pieces.
- Heat olive oil in a pan over medium heat.
- Add diced onion and cook until translucent.
- Add minced garlic and cook for another minute.
- Add crumbled tofu to the pan.
- Stir in chipotle pepper, adobo sauce, smoked paprika, cumin, salt, and pepper.
- Add vegetable broth and mix well.
- Cook for about 10-15 minutes, stirring occasionally.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the spice level by adding more or less chipotle pepper.
- Serve with rice, beans, or in tacos.
- This dish can be stored in the refrigerator for up to 3 days.
