Description

A spicy and flavorful tofu dish inspired by Chipotle’s sofritas.


Ingredients

  • 14 oz firm tofu
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • 2 tbsp adobo sauce
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup vegetable broth
  • Fresh cilantro, for garnish

Instructions

  1. Press and drain the tofu to remove excess moisture.
  2. Crumble the tofu into small pieces.
  3. Heat olive oil in a pan over medium heat.
  4. Add diced onion and cook until translucent.
  5. Add minced garlic and cook for another minute.
  6. Add crumbled tofu to the pan.
  7. Stir in chipotle pepper, adobo sauce, smoked paprika, cumin, salt, and pepper.
  8. Add vegetable broth and mix well.
  9. Cook for about 10-15 minutes, stirring occasionally.
  10. Garnish with fresh cilantro before serving.

Notes

  • Adjust the spice level by adding more or less chipotle pepper.
  • Serve with rice, beans, or in tacos.
  • This dish can be stored in the refrigerator for up to 3 days.
