Ingredients

- 2 cups chocolate graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 8 oz semi-sweet chocolate, melted
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine chocolate graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth.
- Add sugar and vanilla extract. Mix until well combined.
- Incorporate eggs one at a time, mixing on low speed.
- Add sour cream and melted chocolate. Mix until the batter is smooth.
- Pour the batter into the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from oven and cool to room temperature. Refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use dark chocolate.
- Top with whipped cream and chocolate shavings for presentation.
- Consider adding a layer of ganache on top for extra decadence.
