Ingredients

  • 2 cups chocolate graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 8 oz semi-sweet chocolate, melted

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine chocolate graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth.
  4. Add sugar and vanilla extract. Mix until well combined.
  5. Incorporate eggs one at a time, mixing on low speed.
  6. Add sour cream and melted chocolate. Mix until the batter is smooth.
  7. Pour the batter into the crust in the springform pan.
  8. Bake for 55-60 minutes or until the center is set.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove from oven and cool to room temperature. Refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use dark chocolate.
