Ingredients

- 1 cup dark chocolate chips
- 1/2 cup sweetened shredded coconut
- 1/2 cup dried cherries, chopped
- 1/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
- In a microwave-safe bowl, melt the dark chocolate chips.
- Stir in the sweetened condensed milk and vanilla extract until smooth.
- Add the chopped cherries and shredded coconut, mixing well.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop the mixture into small balls.
- Roll the balls in additional shredded coconut if desired.
- Place the truffles on a baking sheet and freeze for 1 hour.
- Store in an airtight container in the refrigerator.
